Use a large pan with plenty of boiling salted water so pasta has room to move around.
Stir pasta for a moment once it’s in the water to prevent it sticking together, and cook fast with the pan uncovered.
Test by lifting out a strand and biting into it it should be tender but still firm. Follow packet directions for cooking time; fresh pasta will cook in only 2-3 minutes. When cooked pasta will rise to the surface.
Drain pasta in a colander as soon as it is cooked. If allowed to stand in the cooking water it g will soften.
Turn cooked pasta immediately into a hot serving bowl and toss with a knob of butter. If you let pasta stand without a coating it will stir: together.
Try cooking a mixture of plain noodles and green, or spinach, noodles together they look very pretty for serving.
Fresh tagliatelle cooked and tossed in butter are a good accompaniment to dishes having a rich sauce or gravy. Season with freshly milled pepper.
Parmesan cheese is best if you grate it yourself, or use hard, dry pieces of Cheddar cheese that will grate easily.
