Serves 6
1 lb (450g) cold cooked chicken
1 tablespoon finely chopped onion
2 stalks celery
3 dessert apples
1/4 pint (150m1) natural yoghurt
1/4 pint (150m1) mayonnaise
salt and freshly milled pepper
1 oz (25g) chopped walnuts crisp lettuce leaves, for serving

Trim and dice the chicken and put into a mixing bowl. Add the finely chopped onion. Trim and finely chop the celery stalks. Quarter, core and dice the apples (but do not peel). Add celery and apples to mixing bowl.

Combine yoghurt and mayonnaise in a mixing bowl and season with salt and pepper. Add to the chicken mixture and toss together. Fold in the chopped walnuts. Spoon on to crisp lettuce leaves arranged on a serving platter. Serve with thinly sliced brown bread and butter.
