Makes 61b (2.7kg)
3 lb (1.4kg) green gooseberries 3/4 pint (400ml) water
finely grated rind and juice of 2 oranges
31/21b (1.6kg) granulated sugar
Top and tail the gooseberries and put them into a preserving pan. Add the water, finely grated orange rind and orange juice. Simmer gently for about 30 minutes, crushing the fruit occasionally with the back of a wooden spoon, until gooseberries are tender.
Add the sugar and stir until dissolved. Bring to the boil and boil rapidly for about 10 minutes. Draw off the heat and test for a set. Skim the surface. Pour into warmed jars and cover. The subtle hint of orange in this recipe greatly enhances the flavour of the gooseberries.
Variation: If the orange is omitted increase the water used to 1 pint (600ml).
