Thin ham or processed cheese slices. Marmite on its own is delicious.
Mozzarella cheese with a seasoning of salt and pepper an Italian favourite.
Flavoured cream cheese, or a tasty meat paste.
Jam is nice sprinkle the tops with sugar for serving red jam such as raspberry is pretty.
To make 2 sandwiches: In a shallow dish lightly mix 2 eggs with 2 tablespoons milk and a seasoning of salt and pepper. Dip both sides of each sandwich into the egg mixture. Then add to 2 oz (50g) hot and foaming butter in a frying pan. Fry until crisp and brown on one side, then turn to cook the other side. Cut each sandwich in half. Serve on a warmed serving plate with a side dish of sweet pickle or relish.
